Sunstone Bittersweet Chocolate Truffles

Chocolate and wine is a classic combination that will never go out of style.  Today's recipe, "Bittersweet Chocolate Truffles" from Sunstone Vineyards and Winery, is the perfect example.  This recipe combines bittersweet and semisweet chocolate into amazing tasty bite-sized treats.  Pair them with Sunstone Eros wine and you'll have a match made in chocolate heaven.

Bittersweet Chocolate Truffles

  • 6 oz organic bittersweet chocolate
  • 2 oz organic semisweet chocolate
  • 6 Tbsp unsalted butter
  • 1 egg yolk at room temperature
  • 1/4 cup boiling water
  • 1/4 cup unsweetened organic chocolate
In a stainless steel bowl, placed over a saucepan filled partially with water, place chocolate and butter together in the bowl and melt over medium heat stirring often. Melt completely until smooth. Remove bowl from heat and set aside. Keep saucepan on low heat.

Place egg yolk in a small bowl. Pouring slowly, whisk in boiling water. Place the bowl over the saucepan and stir constantly until egg mixture thickens. The color should be pale and have the consistency of light cream. The temperature should read 160 - 165° F. Remove from heat and immediately fold into melted chocolate until incorporated. Pour through strainer into a bowl. Cover and chill for at least two hours.

To form truffles: Allow chocolate to soften about 25 minutes. Pour cocoa on small plate and place melon baler or spoon in warm water to make scooping easier. Scoop chocolate and form into bite size pieces and roll in chocolate powder. Keep tightly sealed. Truffles will keep refrigerated for up to two weeks and frozen for up to three months.
