Here's a great grilled pork entrée that will have you running back for more.  "Grilled Pork Loin with Bacon and Apple Salsa" from Porter Creek Vineyards (Healdsburg, CA) combines an interesting mixture of bacon, onion, apples, potatoes and even butternut squash into a sweet, salty and tangy salsa that will wow you.  Pair it with Porter Creek Pinot Noir and you'll have everything you need for a great outdoor grilling party!

Grilled Pork Loin with Bacon and Apple Salsa

Serves 4-8

  • 8 Pieces Pork Loin cut 3/4 inch thick approx. 6oz ea
  • 2 tablespoons chopped rosemary
  • 1 pinch red Chile flakes
  • 1/2 cup olive oil
  • Bacon and Apple Salsa, see recipe below

Marinade pork with 1 Tblsp of rosemary, pinch Chile flakes and 1/4 cup olive oil. Season pork thoroughly with salt & pepper. Grill to desired doneness (approx 4-5 minutes on each side).

Serve over apple salsa with Porter Creek Pinot Noir.

Bacon and Apple Salsa

Can be made up to 1 day in advance

  • 1 cup thick cut smoked bacon, cut into julienne
  • 1 large yellow onion, diced
  • 1 bunch green onions ,chopped
  • 2 granny smith apples, peeled & diced
  • 1 cup red potatoes, diced and boiled until tender (skin on)
  • 1 cup butternut squash, diced
  • 2 Tablespoons cider vinegar
  • 1 Tablespoon whole grain mustard
Heat skillet, add bacon and cook until crispy. Drain, cool, and reserve fat. Return bacon fat to skillet and heat. Add onions and saute until soft. Add butternut squash and cook until soft. Add rosemary and saute until fragrant. Remove from heat, set aside and then cool.

Combine mustard, vinegar and olive oil in large mixing bowl.  Add cooled onions, squash, potatoes, bacon, apples and green onions. Season with salt and black pepper.
