ImageWhile sparkling wine is commonly associated with celebrations, those who are enamored with sparkling wine appreciate that it has many more uses.  Mumm Napa (Rutherford, CA) makes that clear with these amazing sparkling wine recipe pairings that demonstrate the flexibility of sparking wine.  On the more traditional side, "Hot Crab Dip" is the perfect starter for any dinner party, whether served with warm crostini or simply crackers your guests will love this with the Mumm Napa DVX or Blance de Blanc.  But don't stop at the appetizer.  Sparkling wine works for the main entrée also.  "Mushroom Quiche" is a great example that is easy to prepare and can be made the day before.  Pair it with the Mumm Napa Cuvée M Blue and you'll see why sparkling wine isn't just for special occasions. 

Mushroom Quiche

  • 1 pie crust 9"diameter
  • ¼ cup shredded mozzarella cheese
  • ¼ cup Parmesan cheese, grated
  • 1 T Dijon
  • 1 T Crushed garlic
  • ½ med onion, diced
  • 1 shallot, finely diced
  • 1 cup sliced mushrooms
  • ½ cup ham, diced (optional)
  • 4 pimento stuffed green olives, drained and sliced
  • 5 eggs, lightly beaten
  • ½  cup half and half cream
  • Salt and black pepper to taste
  • Sprinkle of cayenne

Preheat oven to 400 degrees.  Line quiche dish with pastry crust.  Flute the edges and prick the bottom with a fork.  Bake in preheated oven for 8 minutes.

Sprinkle half the cheese on the bottom of the pastry shell.  Spread onion, ham and mushrooms over the cheese, and sprinkle remaining cheese on top.

Lightly stir the eggs, cream, Dijon, garlic, olives, shallot and spices together.  Pour over the cheese and mushroom mixture.   Bake 40 to 45 minutes, until set and golden.

This may be made a day ahead of time and reheated just before serving.

Pair with Mumm Napa Cuvée M Blue.

Hot Crab Dip

  • 10 oz Crab meat, cooked, drained
  • 1 med onion, diced
  • 2 stalks celery, diced
  • 1 med shallot, minced
  • 8 oz ricotta
  • 8 oz parmesan, grated
  • 1 egg
  • 1 T garlic, crushed
  • 1 T dijon
  • 6-8 artichoke heart pieces, drained and diced
  • dash cayenne
  • salt and freshly ground black pepper to taste
  • olive oil
Preheat oven to 400º F.

Lightly sauté celery, shallot, and onion in a small amount of olive oil over medium heat.  Set aside and let cool.  In a medium mixing bowl, combine ricotta, parmesan, egg, garlic, and  Dijon, mix together. Add artichoke hearts, and crabmeat; mix well.  Stir in celery, shallot, and onion.  Add cayenne, salt, and pepper to taste.  Transfer dip to medium baking ramekins, custard cups, or 8" x 8" glass baking dish.  Bake for 25 min or until golden on top and slightly bubbling.  Serve warm with crostini or crackers.

Pair with Mumm Napa DVX or Blanc de Blanc.
