ImageThis week's featured Winery recipe is provided by Hop Kiln Winery, Healdsburg, CA.  Hop Kiln Winery is located  in the heart of the Russian River Valley and situated on a distinctive historic property that includes an authentic Hop Kiln from 1905.  Today, the Hop Kiln, serves as the tasting room for the wonderful Russian River Valley wines produced by Hop Kiln Winery.

"Succulent Cracked Crab" is the perfect crab season entrée.  Either as a main dish or appetizer the Cracked Crab is simply delicious and perfect for holiday entertaining.

Succulent Cracked Crab

Chef Renzo Veronese

Serves 4

  • 3 crabs, cooked and cracked
  • 2 cloves of garlic, minced
  • 1 stick of butter
  • Juice of 1 lemon
  • 2 tablespoons olive oil
  • ¼ cup HK Generations 2005 Chardonnay
  • ½ cup chopped parsley

Preheat the oven to 350.  In an amply-sized pan, sauté the garlic in melted butter along with the lemon juice, wine and olive oil - for 5 minutes.  Add the cracked crab.  Coat the crab with the sauce.  Spread the crab on a cookie sheet.  Bake for 5 minutes.  Remove from the oven and garnish with chopped parsley.

Serve with HK Generations 2005 Chardonnay, Russian River Valley

HK Generations 2005 Chardonnay.  This Russian River Valley Chardonnay fills the mouth with generous fruit flavors - green apple, Asian pear and mango - wrapped in vanilla, butter and toasty spice.  The finish is lively and lingering.
