Today's spotlight recipe is provided by Foppiano Winey and Vineyard located in Healdsburg, CA. The Foppianos have a long history in the wine industry. Since 1896, the Foppianos have been a part of the wine industry and have called the Russian River Valley their home. As is showcased in the "Foppiano Petite Sirah Braised Prime Rib", Petite Sirah is one of their specialties. The Petite Sirah adds black and blue berry flavors that turn this Prime Rib into something outstanding.
Foppiano Petite Sirah Braised Prime Rib - 3 T Olive Oil
- 5 garlic cloves
- 12 diced Apricots
- 6 shallots
- 2 C vegetable stock
- 1 C Foppiano Petite Sirah
- 1/4 oz. dried porcini mushrooms
- 6 individual servings of Prime Rib
- Salt & Pepper
SAUCE: Heat 1 T olive oil in a heavy skillet over medium heat. Add crushed garlic, apricots, and shallots. Sauté until shallots have softened. Add 2 C of vegetable stock, 1 C Foppiano Petite Sirah, and mushrooms. Simmer and reduce slightly. Add salt and pepper to taste, then reduce for another few minutes. (Half of the sauce will be used for simmering. Half of the sauce will be used for serving.) BRAISE: Salt and pepper each rib section. Heat 3 T olive oil in large skillet over medium-high heat for braising. Add prime rib and cook until the skin is brown and crisp. SIMMER: In the same skillet, add half of the sauce and simmer approximately 20 minutes until the Prime Rib is cooked to your desired temperature. SERVE: Smother each portion with the other half of the sauce and enjoy!
