If you haven't yet tried sunchokes, or if you have and want more then you need to try today's recipe, Sunchoke Bisque with Crispy Bacon.  Chef Didier Ageorges from Chalk Hill Estate combines the somewhat nutty flavor of the sunchoke with the saltiness of bacon to create an amazing bisque that highlights both the flavors and flexibility of sunchokes.  Pair this with Chalk Hill Estate Chardonnay for a perfect meal. 

Sunchoke Bisque with Crispy Bacon

Recipe from Chalk Hill Estate Chef Didier Ageorges


Serves 4
  • 2 pounds of peeled and diced sunchokes (also called Jerusalem artichokes).  Pick roots that are plumpish and vibrant in appearance.  Those that are wrinkled and soft can have an undesirable bitter taste.
  • 1 onion minced
  • 2 tablespoons of butter
  • 1 quart of chicken stock
  • 3 tablespoons of good cream
  • 4 slices of smoked bacon, fried and chopped.
  • A bit of chopped chives

Sweat the onions with the butter until translucent; add the sunchokes and the chicken stock. Simmer until cooked. Blend and add the cream. Check seasoning and serve in warmed soup bowls.  Sprinkle the bacon over the top of the soup, and add some chives.  Serve with the Chalk Hill 2003 Estate Bottled Chardonnay.
