Boeger Chimichuri - Grilling Marinade Print E-mail

ImageHere's a quick fresh herb marinade that is great for spicing up end of summer grilled meals.  Vintner's Chimichuri from Boeger Winery combines fresh cilantro, basil, and parsley with Boeger Red Wine, soy sauce and vinegar to give an interesting flavor to chicken, beef or even shrimp.  Simply make the Chimichuri the evening before and marinade the meat or shrimp overnight before grilling.  It couldn't be easier…

Vintner's Chimichuri

  • 2 cups fresh Cilantro
  • 2 cups fresh Basil
  • 2 cups fresh Flat Leaf Parsley
  • 1 1/3 cup Olive oil
  • 2/3 cup Sherry Vinegar
  • 1 tablespoon Peppercorns
  • 2/3 cup Soy Sauce
  • 1/4 bulb Garlic
  • 2/3 cup Boeger Red Wine
  • 1 teaspoon Cumin
  • 1 tablespoon Red Chili Pepper Flakes


Blend all ingredients in a food processor.  Pour mixture over chicken, beef or shrimp and let marinade for a minimum of four hours (up to 24 hours).  For best results, grill entrée over medium flame.  

Serve with Boeger Tempranillo and good company.

About Boeger Tempranillo

The Boeger Tempranillo blends emulate the style of the Rioja region of Spain.  These wines are made in traditional Rioja style. We blend the other main grape varieties of the Rioja region as necessary and we age the wines for a minimum of three years between barrel and bottle before release.  The results are incredibly unique wines that are ready to drink but still incredibly agreeable.  The extended aging before release results in a wine that seems almost "pre-cellared."  Some of the original fruitiness has changed into the complex wine before you.  The Tempranillo has an aroma of intense berry and dried fruit, followed by cedar, tobacco, leather and earth.  On the palate it is crisp, with pronounced acidity from beginning to end, making it a great wine to pair with food.  As with most Tempranillo/Rioja blends, this wine will age wonderfully for years to come.  Cellar it for as long as you can stand it.

ImageBoeger Winery is located in the Sierra Foothills just east of Placerville where scenic beauty and rich California history have intertwined to create a truly memorable setting.  For thirty-five years, since its founding in 1972, Boeger Winery has represented quality and value.  Boeger is able to produce quality wines consistently because 90% of the grapes are estate grown.  The vineyards are in a Region 3 climate zone, on steep hillsides at the 2,300-foot elevation in the El Dorado appellation.  The original plantings include Merlot, Cabernet Sauvignon, Zinfandel, Chardonnay, Sauvignon Blanc and Sémillon. In order to produce new and unique wines, some varieties have recently been removed and replanted or grafted over to more current and interesting types such as Sangiovese, Nebbiolo, Refosco and Syrah.  Boeger is also propagating a remarkable old Zinfandel clone, which has its roots in the original vineyard, planted on the site in the 1890's.  The winery produces 22,000 cases of wine a year, about 70% reds.  At this size, the operations are still hands on and each small batch of wine is under the personal control of the winemaker.
