Ahi Tuna with Soy and Wasabi

ImageJoanne James Russell from Rabbit Ridge Winery (Paso Robles, CA) created today's "Ahi Tuna with Soy and Wasabi" recipe for the winery's first open house party.  As she says "the neighbors loved it" and so will you.  This dish is great for entertaining but you can also enjoy it as a wonderful homemade dinner.  Joanne prefers to make this dish with Ahi tuna but any fresh tuna will work.  

Ahi Tuna with Soy and Wasabi

Tuna

  • 2 Fresh Ahi, yellow fin, or albacore tuna steaks, washed and patted dry  
  • 1 T. Soy Sauce
  • Freshly Ground Pepper

Place tuna in a glass container and coat with soy. Let marinate 30 minutes, but no longer. Remove from soy and pat dry. Season both sides with pepper.

Soy and Wasabi Sauce

  • 4 T. Soy Sauce
  • ½ t. Sesame Oil
  • 1-2 t. Fresh Garlic, minced
  • 1-2 t. Fresh Ginger, minced
  • 1 t. Dijon Mustard
  • ½ t. Wasabi Paste
  • 1 t. Dry Sherry
  • 1 Scallion, sliced thin - garnish

Combine all ingredients. Set aside to serve with Ahi.

Assembly:  Heat a non-stick pan, lightly coated with olive oil. Quickly sear both sides of tuna on medium-high heat, about 1 minute each. Remove from heat. Slice thin and serve with sauce and extra wasabi on the side. Adjust cooking time for medium temperature. Garnish with thinly sliced scallions. Serve with Rabbit Ridge Voignier.

Viognier is a flavor-packed, fruity white grape from the northern Rhône region of France called Condrieu, and is used as a blending grape in the Chateau Neuf du Pape region.   It is known for its crisp acidity and lush peach, apricot and ginger nuances.   The Rabbit Ridge Voignier has crisp acidity that comes from the limestone soil and cool climate on the west side of Paso Robles.

All of the Rabbit Ridge vineyards in Paso Robles are located on the west side of highway 101. We believe this area of limited water, shallow, rugged, rocky, calcareous soils will produce some of the finest wines in Paso Robles, and among the finest in California.   It is common during the growing season for the temperature on the west side to drop from 90 degrees at 3:00 in the afternoon, to 65 degrees by 6:00 PM, and then to 40 degrees at night.   These vineyards were planted precisely throughout the Paso Robles appellation to take advantage of the unique micro climates and soil characteristics that would best suit each grape variety.
