The Old Tavern: Sicilian Prawns Print E-mail

ImageToday's recipe "Sicilian Prawns" from The Old Tavern at Grafton (Grafton, VT) is a delicious summertime dish.  As Chef David Smith says "It only takes about a half hour from start to finish, making it a perfect, light, midweek dinner. It goes great with a cold white wine like a Pinot Grigio.".  What could be better for those hectic summer days?  

Sicilian Prawns

The Old Tavern at Grafton, Vermont

"I love to cook seafood as it's such a versatile medium. Our current menu has five seafood/fish entrees."
  • 10 black tiger shrimp, washed and deveined
  • 6 oz assorted olives (pitted, Spanish & Greek)
  • 2 T roasted garlic
  • 2 oz white wine, preferably Pinot Grigio
  • 1 oz extra virgin olive oil
  • 1 large tomato, diced
  • 1 T chopped shallot
  • Sea salt & pepper
  • ½ lb linguine cooked el dente
  • 1 oz cold butter, cut in small cubes
  • 1 T capers, rinsed
  • 3 large basil leaves, chiffenade
  • Fresh parmesan
Heat large sauté pan to medium high. Add oil and heat until hot but not burning. Add shrimp and shallot. Sauté over same heat for 1.5 minutes. Add wine and simmer for one minute. Add tomatoes, capers, olives, roasted garlic and simmer for one minute. Add cold butter, turning it to a sauce.

Toss with linguine. Top with fresh basil & parmesan.

Serves two
