Can't wait for summer?  Well, neither can Chef Doug Turbush of Bluepointe Restaurant (Atlanta, GA).  Today, Chef Turbush presents his "Spiced Crab Salad with Heirloom Tomato Gazpacho".  As Chef Turbush says  "This is an awesome, refreshing summertime dish, served very cold, that takes advantage of great locally grown heirloom tomatoes and awesome Maryland crab.  The dish has a hit of spice from Thai bird chilies that are cooled off by the velvety texture of crème Fraiche."  If you're lucky enough to find a colorful mixture of red and yellow Heirloom Tomatoes this salad will not only taste great but also look great!  Enjoy.

Spiced Crab Salad with Heirloom Tomato Gazpacho


Spiced Crab Salad
  • 1 lb. Lump Crab Meat
  • 1 Shallot, minced    
  • 1 Thai Bird Chili, minced
  • 1 tsp. Lemon Juice
  • 2 Tbsp. Crème Fraiche           
Carefully pick through the crab, trying not to break up the large lumps, mix the remaining ingredients together in a separate bowl.  Gently fold the Crème Fraiche mixture into the crab meat.  

Heirloom Tomato Gazpacho

  • 2 lbs. Heirloom Tomatoes
  • 1 Jalapeno
  • 2 sprigs Cilantro
  • 2 sprigs Basil
  • 3 Shallots
  • 4 cloves Garlic
  • ½ cup Sherry Vinegar
  • ½ cup Balsamic Vinegar
  • ½ cup Extra Virgin Olive oil
  • Salt & Pepper, to taste
Remove the seeds from the Jalapeno.  Wash and rough chop all vegetables, core the tomatoes.  Add all the ingredients together with half of the olive oil and season with salt and pepper. Marinate overnight and then pass through the food grinder. Then pass through a fine mesh strainer.  Blend with remaining olive Oil. Check the seasoning and keep cold. Serve with Spiced Crab Salad.
