ImageChef Kevin Taylor presents unpretentious and creative American Cuisine in his eponymous Restaurant Kevin Taylor (Denver, Colorado).  Using only the freshest ingredients, Chef Taylor creates dishes of elegant substance, walking delicate lines between fusion and French, the American Southwest and the Asian Rim. This creativity extends well beyond the main meal as is shown in “Hawaiian Pineapple Charlotte with Buttermilk Panna Cotta, Cassis Sorbet and Roasted Pineapple Syrup”.  As Chef Taylor says, “The Pineapple Charlotte is one of my favorite desserts here at the restaurant. I love taking a dish as classic as a Charlotte and adding bright, colorful ingredients to give it a modern twist. I am very fortunate to have Jason LeBeau as our pastry chef. He and I have worked together for 10 years and his creativity with sugar never ceases to amaze me.”

Hawaiian Pineapple Charlotte

with Buttermilk Panna Cotta, Cassis Sorbet and Roasted Pineapple Syrup

Makes 4 to 8 depending on size of ring mold

  • 5 cups heavy cream
  • 1 ¾ cups sugar
  • 1 vanilla bean, sliced open
  • 10 sheets gelatin
  • 7 cups buttermilk
  • 1 whole pineapple
  • 2 cups sugar
Combine heavy cream through vanilla bean and bring to a boil. Add gelatin to mixture stirring until dissolved.  Add  buttermilk to mixture and pour into ring molds.

Core and cut 1 whole pineapple into ¼ inch cubes. Pour 2 cups sugar onto a large sheet pan – add pineapple cubes stirring to cover with the sugar.   Roast at 400º until caramelized – stirring occasionally. Cool.

Place roasted pineapple cubes in ring molds on top of the cream mixture.

Refrigerate until set and serve with a Cassis or Raspberry Sorbet.
