Save Recipe: Millefeuille of Boar Tenderloin and Foie Gras de Canard in Star Anis Demi Glace garnished with Washington Apple Chips

ImageNikolai's Roof (Atlanta, GA) invites you to explore Boar with them as their ingredient of the month.  Boars are wild animals that have very lean and full flavored meat.  At Nikolai's, Boar tenderloins are pan seared with Foie Gras and served with a Star Anis demi glace and apple chip garnish.  This elegant dish matches the spectacular views from the 30th floor dinning room at Nikolai's Roof.  Nikolai's Roof also suggests quickly sautéing or grilling boar tenders over high heat for another great boar presentation.  

Millefeuille of Boar Tenderloin and Foie Gras de Canard in Star Anis Demi Glace Garnished with Washington Apple Chips


Serves 4

  • 4 Boar Tenderloins
  • 12 slices Foie Gras
  • 2 cups Boar Demi Glace
  • 2 pieces Star Anis
  • 8 finely sliced Apple Chips
  • 4 Yellow Pea shoots

Bring the Demi to a boil and add the star anis, simmer for a few minutes and strain trough a fine sieve. Pan sear the boar on high heat and quickly remove from the pan. Finish it off in the oven until medium rare. Also pan sear the Foie Gras over high heat until nice and caramelized on the outside, place on a napkin to remove the fat.

Slice the boar in fine slices and place the Foie Gras in between. Slightly season the dish with sea salt and ground pepper. Place the apple chips on top and drizzle the whole dish with the Demi glace. Garnish nicely with the pea shoots. Enjoy.
