The Atwood Café (Chicago, IL) is known for comfort food classics in an intimate setting.  Executive Chef Heather Terhune also enjoys baking fresh breads and creating desserts such as today's recipe "Roasted Banana White Chocolate Bread Pudding".  This bread pudding elevates comfort food a notch, with its wonderful mixture of white chocolate, cream, bananas and hearty challah bread, it's delectable!

Roasted Banana White Chocolate Bread Pudding

  • 1 quart heavy cream
  • 1 cup sugar
  • 4 whole eggs
  • 1 tsp vanilla extract
  • 1 tsp ground cinnamon
  • Pinch of salt
  • 1 cup chopped good quality white chocolate
  • 4 whole bananas, sliced
  • 1 loaf of challah bread, sliced


1. Mix cream, sugar, eggs, vanilla, and cinnamon, salt.
2. Butter a 9x13 baking dish.
3. Layer the bread, bananas, and white chocolate in the baking dish until there are 3 layers of each.
4. Pour the custard over the bread and press down.
5. Cover with plastic wrap and refrigerate overnight.
6. The next day, preheat the oven to 350 degrees.
7. Remove the plastic wrap and replace with foil.
8. Set dish in pan of hot water, bake 40-50 minutes until set.
