ImageIf you are dreaming about peaches then you'll want to try this amazing breakfast treat from the Victorian Treasure Inn (Lodi, WI).   "Baked Peach Stuffed French Toast" combines thick slices of French bread with cream cheese and a dreamy peach sauce to create an eye opening breakfast dish. As Innkeeper Eric Degelau says this is a "very easy recipe that can be prepared the night before".  It gets rave reviews at the Inn. You can also freeze the leftovers and they will easily reheat in the oven.   Give it a try for yourself to see just how great it is!
    

Baked Peach Stuffed French Toast


Recipe By:Eric Degelau - Victorian Treasure Inn
Serves 12   
  • 1 loaf  French bread (not baguette), sliced 1" thick (yield 24 slices)
  • 8 ounces cream cheese, sliced 1/4-inch thick
  • 2 bags frozen peach slices, thawed
  • 1 cup brown sugar, packed
  • 1 cup pecans, chopped
  • 1/2 cup butter
  • 2 tablespoons corn syrup, dark
  • 1 dozen eggs
  • 1 1/2 cups half and half
  • 1 teaspoon vanilla
Spray pan coating on 11x15" metal pan.  9x13" can be used, however it will yield 9 servings.  

Melt butter, brown sugar and corn syrup over medium heat until bubbly.  Pour the melted mixture into the greased pan.

Spread peaches over the caramel syrup.  Place twelve bread slices flat in three rows of four pieces on top of the peaches.

Place the 12 slices of cream cheese on the 12 slices of bread in the pan.

Spread chopped pecans over the bread and cream cheese.

Mix thoroughly the eggs, milk and vanilla.  Pour half the mixture over the bread and cream cheese slices in the pan

Place the remaining 12 slices of bread on top of the cream cheese.  Pour the remaining egg mixture over the bread.

Refrigerate overnight.  

Preheat oven to 350 degrees for 45 minutes.  Cover with tin foil if top starts to get too brown.

Using a spatula lift out a piece of stuffed French toast and place on a plate.  Top with warmed maple syrup and garnish with toasted pecans.  

NOTES: Cut bread slices at an angle.  You can substitute blueberry, cherry, etc for the peach sauce. The cream cheese should yield 12 slices.
