ImageIf you are looking for a cool and tasty fruit concoction for a hot summer day then "Papaya Ginger Fools" from Two Sisters Inn (Manitou Springs, CO) is just the thing.  These tasty treats combine papaya, blueberries, grapes, ginger and cream to make a wonderful dish that works equally well as part of breakfast, lunch or dinner.  With such a great combination you'd be foolish not to fall for these wonderful cool treats!

Papaya Ginger Fools


Makes 8 ½-cup ramekin servings
  • 2 cups fresh papaya    
  • ½ lime, juiced    
  • ¼" ginger root slice, peeled and minced    
  • 2 cups fresh blueberries
  • 1 cup fresh grapes, quartered and seeded
  • 3/4 cup heavy whipping cream
  • 1/3  cup extra fine sugar    
  • 1 cup no or low fat vanilla yogurt   
Garnish
  • ½ cup apricot preserves, strained
  • 8 blueberries
Place papaya in a blender and purée until smooth.  Add lime juice and ginger and continue to purée until all ingredients are blended.  (This makes about 2/3 cups of puréed papaya.)  Refrigerate overnight to let the flavors marry.

Chill a metal bowl and beaters before whipping cream. Whip cream to soft peaks and add sugar.  Continue whipping until peaks are firm.  Fold in puréed fruit and then yogurt.  Equally divide blueberries and grapes in eight (8) ½-cup ramekins. Spoon mixture on top of the fresh fruit and garnish with a spider web design of strained apricot preserves and a blueberry.
