ImageShrimp cocktail is all grown up in this fun, modern adaptation of Citrus Marinated Shrimp Cocktail by Stone Hill Inn (Stowe, VT).  The citrus marinade combines orange juice, lemon juice and vodka with ketchup and hot pepper sauce to add a tangy, spicy flavor right to the shrimp that eliminates the need for traditional cocktail sauce.  This is a great appetizer that is easy to prepare and even easier to serve.

Stone Hill Inn's Citrus Marinated Shrimp Cocktail

  • 1 cup orange juice
  • 1 cup fresh lemon juice
  • 3/4 cup ketchup
  • 1/3 cup vodka
  • 1/4 t. hot pepper sauce
  • 1/4 cup olive oil
  • 1 1/2 pounds peeled & deveined large shrimp, cooked
  • 1 small red onion, very thinly sliced (about 1 3/4 cups)
  • 1 cup finely chopped fresh cilantro

Combine juices, ketchup, vodka, and hot pepper sauce in a large bowl.  Whisk in the oil.  Add shrimp, onion, and cilantro.  Mix well.  Cover and refrigerate at least 2 hours and up to 6 hours.  Remove shrimp for marinade and serve on a platter, or for pretty individual servings use a martini glass, as pictured here.  Spoon just a little of the marinade over the top.

Makes 6 to 8 servings.
