Newcastle Inn: Laura's Famous Rum Cake

ImageIf you're looking for the perfect dessert for an upcoming special occasion then try "Laura's Famous Rum Cake".  As Laura, the innkeeper at The Newcastle Inn (Newcastle, ME) says "This cake is traditionally served for dessert every Christmas Day and on other special occasions at The Newcastle Inn".  Laura always uses Myers's Original Dark Rum but she says you can also substitute bourbon or even Irish whiskey for an interesting variation.  Laura serves up lots of other amazing dishes at the Inn which Food & Wine magazine says is "Exactly what a small inn should be...".  

Laura's Famous Rum Cake

  • 1 pkg. regular white cake mix (not angel food or pudding in the mix)
  • 1 pkg. instant vanilla pudding
  • 1 oz. dark rum (or bourbon or Irish whiskey)
  • 4 large eggs
  • 1 cup milk
  • ½ cup vegetable oil
  • 1 cup chopped nuts (optional) tossed with 2 tsp. flour


Combine above ingredients in large mixer bowl, and beat on medium until batter is smooth and lemon-colored.  Bake in a greased tube or bundt pan at 325° for 55 minutes, or until cake tester comes out clean.  Pour topping over cake while hot and cool in pan for 2 hours.

Topping

  • ¼ lb. butter
  • ¾ cup sugar
  • ½ cup dark rum


Combine all three ingredients in a small saucepan.  Stir over medium heat until butter and sugar are melted.

Wrap cake in foil after 2 hours of cooling.  Refrigerate 24 hours before serving, if possible.
