While this simple recipe combines standard ingredients including milk, eggs, and cheese, the result is extraordinary! And as a bonus, the leftovers make easy blintzes-rolled over in 1"x3" slices and topped with sour cream and fresh fruit. Fruit & Cheese Delight Serves 12 - 2 lbs Monterey jack cheese, grated
- 2 cups milk
- 12 eggs
- 2 cups flour
- 1 cup melted butter
- 1 qt. low-fat cottage cheese
- ½ cup croissant crumbs
Blend all ingredients except Monterey Jack cheese together. Evenly distribute grated Monterey jack cheese into a greased 9"x13" pan. Blend milk through cottage cheese together. Pour egg mixture over cheese and dust with croissant crumbs (adds a nice buttery crunch topping). Bake 45 minutes at 350F. Cut into squares and top with sour cream, (or crème fraiche) and fruit preserves.
