Sadly and with a heavy heart, I have decided to shut down Project Foodie on December 28th, 2015.

The past 9 years have been a wonderful journey — I met many amazing people, learned an incredible amount and had a great time helping food lovers (including myself) keep track of recipes.

I hope that you too have enjoyed Project Foodie and the fruits of my labor, and that of the various people who helped me over the years with Project Foodie.

Haydon Street Inn: Bananas Foster Pancakes

ImageBananas Foster is a quintessential New Orleans dessert that Haydon Street Inn (Healdsburg, CA) has transformed into an amazing breakfast dish.  Bananas Foster Pancakes elevates the plain-old pancake into a gourmet breakfast complete with candied walnuts.  At Haydon Street Inn, innkeepers John and Keren will also serve it with a side of bacon, fresh French press coffee, and warm hospitality.

Bananas Foster Pancakes

  • 1 cup all-purpose flour
  • 1 Tbls. granulated sugar
  • 2 tsp. baking powder
  • 1/2 tsp. salt
  • 1 egg
  • 3/4 cup milk
  • 1/4 cup shortening, melted
  • ½ tsp. ground nutmeg
  • 1 tsp. vanilla extract
  • 1/4 cup chopped candied walnuts (recipe below)
  • Bananas Foster (recipe below)

In a small bowl, combine the flour, sugar, baking powder and salt.  Add chopped (coarse) candied walnuts, nutmeg and vanilla.  Combine the egg, milk and shortening; stir into dry ingredients just until moistened.  

Pour batter by 1/4 cupfuls onto a greased hot griddle. Turn when bubbles form on top of pancakes; cook until the second side is golden brown.  

Bananas Foster

  • 2 sliced bananas
  • 3 Tbls. brown sugar
  • Zest from ½ of a lemon
  • 2 Tbls. butter
  • 1 oz. rum

Melt butter and brown sugar, stir until hot.  Add remaining ingredients and cook until bananas are tender.  Spoon over pancakes, garnish with extra candied walnuts or candied almonds, sprinkle with powdered sugar and serve.

Candied Walnuts

  • 1 lb. walnut halves
  • 1 Tbsp. ground cinnamon
  • 2 qts. simple syrup (equal parts of sugar and water)
  • 1 cup turbinado or coarse grind sugar

Mix cinnamon, simple syrup and walnuts in a large sauce pan.  Bring to boil and boil for 10 minutes, stirring occasionally.  Drain well and spread on oiled baking sheet.  Generously sprinkle with turbinado sugar.  Bake at 325 degrees F for 20 minutes, stir.  Sprinkle with sugar again and bake until crisp, stirring occasionally.  These will keep well in zipper plastic bags.
