An enticing homemade breakfast is a welcome treat whatever time of year.  But in the heart of winter, no homemade breakfast is complete without a warm fresh from the oven coffee cake.  "Ginger Pear Coffee Cake" from Farolito Bed & Breakfast Inn, Santa Fe, New Mexico will not only fill your breakfast cravings but it is also elegant, exotic, and easy to make.  Try it out for Sunday brunch, afternoon tea or even a nice after dinner treat.

Ginger Pear Coffee Cake

  • 3 tablespoons butter
  • 2 fresh pears - peeled, cored, and sliced
  • 1 tablespoon fruit fresh
  • 1/3 cup brown sugar
  • 1 1/2 teaspoons ginger
  • 1 teaspoon grated lemon peel
  • 1 teaspoon grated orange peel
  • 1 egg - beaten
  • 1/4 cup melted butter
  • 1/2 cup milk
  • 1 1/2 cups flour
  • 1/2 cup sugar
  • 1 1/2 teaspoons baking powder
  • 1/4 teaspoon salt
Preheat oven to 350 degrees.  Place 3 Tablespoons butter in 9" cake pan and melt.  Arrange pear slices in bottom of pan in a spiral pattern.

Mix brown sugar, ginger, lemon peel and orange peel, set aside.

Beat egg, melted butter, and milk together.  In a separate bowl, sift together flour, sugar, baking powder, and salt.

Stir egg and flour mixtures together until well blended.  Pour batter over pears and spread evenly.

Sprinkle brown sugar mixture over top.  Cut through batter with knife to marble cake.

Bake for 25 - 30 minutes.  Let stand for 5 minutes.  Invert cake onto serving plate.
