Ahhh Blueberry muffins hot from the oven - they taste great.  While you've probably tried lots of muffin recipes, today's is a bit different.   The recipe from Old Bridge Inn (Jeffersonville, IN) uses non-fat yogurt for added moistness with less fat!

Blueberry Muffins

Makes 12 regular or 24 mini muffins

  • 1 3/4 cups all-purpose flour
  • 1/3 cup granulated sugar
  • 1 1/2 teaspoons baking powder
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1/3 cup melted butter or margarine
  • 3/4 cup (6 oz. container) plain non-fat yogurt
  • 1 teaspoon vanilla
  • 1 egg
  • 1 cup fresh or frozen blueberries

In a large bowl, stir together the flour, sugar, baking powder, baking soda and salt.  In another bowl, stir together the butter, yogurt, egg and vanilla. Stir the liquid ingredients into the dry just until the dry ingredients are moistened. Blend in the blueberries. Spoon into muffin tins. Bake at 400° for 10 to 12 minutes for the mini muffins or about 15 minutes for the regular sized muffins.

Enjoy!

About Old Bridge Inn

Seconds to Louisville, Kentucky, this neo-classical Inn was built by a prominent Jeffersonville family in 1836. The Old Bridge Inn, which has a fireplace in the parlor, is decorated with antiques and features five beautiful bedrooms. Among the many amenities you will enjoy are a full breakfast and complimentary beverages. The Inn is named for the old Big Four Railroad bridge, which can be seen from the inn, spans the river and is known locally as the bridge that goes nowhere. This National Register home is conveniently located within walking distance of shops, restaurants and the Ohio River. The falls of the Ohio fossil beds are a short drive from the Inn along the river, as well as the Howard Steamboat Museum.
