Rising to the Occasion

A few years ago I was bit by the bread-baking bug. While I own several stellar bread-focused cookbooks, I can't help myself from pouring over every new release--always searching for ways to improve my technique, or for unique bread...

Years ago my favorite meal to order in a coffee shop was something called Joe's Special--a hearty egg scramble made with seasoned ground beef and frozen chopped spinach. This Sunset recipe is a 21st century remake, enlivened with spicy andouille sausage, fresh spinach, sliced mushrooms, and hot pepper flakes (which provide its "devil" moniker). As far as one-pan meals go, this still can't be beat...any time of day or night. For a stress-free dinner, serve with tossed baby greens, a crusty sourdough baguette, and a glass of chilled white wine.

This recipe is a great way to be introduced to Spaghetti Squash. Now that I think about it this recipe is a great way to introduce you to quite a few unfamiliar veggies, it doesn't get much better than milk, butter, and cheese with the heat of the Jalapeno pepper...to quote a certain Food Network star "Yum-O".
