1-2-3 (As Revived By Jell-O)

(Mercury News, September, 2008)

After discontinuing packaged 1-2-3, Jell-O came up with a sort-of-scratch version. Word on the Internet is that the mixture frequently separates into two layers instead of three.

Oh so good and easy! I must confess, I used canned corn and the result was wonderful.
Make a bit of the dressing on the side from EVOO, lime juice, S&P and then toss it over some lettuce/bag salad. Add a serving of the bean/corn mix. Serve with hot rice and some bread or tortillas. Dinner! Vegetarian, high in protein and complex carbohydrate. Healthful, delicous. Oh yeah!

Moroccan Fish With Sweet Onion Jam

(Mercury News, September, 2008)

Paula Wolfert's original recipe called for tilefish, which these days is not recommended by sustainable-seafood experts. Instead, use any thick white fish such as monkfish, halibut, rockfish or cod. This scaled-down version of the recipe will leave you with extra onion jam to use as a condiment on sandwiches or with roasted meat. It can be refrigerated in an airtight container for about 2 weeks.
