This recipe will remind you how good flank steak can be--even when it's cooked right on top of the stove. I began the meal with a crisp green salad with garlicky croutons; then served the sliced meat and mushroom ragout over a soft mound of instant polenta (made in less than 10 minutes). With a nice glass of zinfandel, it made a surprisingly elegant weeknight dinner--and I never even turned on the oven! Finish off your wine with a good soft cheese and crisp Bosc pears for dessert.

I love bread and gravy so this is my kind of recipe. I don't use the EXACT same ingredients…I never use low sodium anything and I use my own leftover chicken for this recipe, not store bought rotisserie. I've also been know not to use the vegetables, just make the chicken in cream sauce and add cooked frozen peas. Yummy. My mom used to make a very similar kind of dish she called Chicken Divan with broccoli - she would put the chicken stew in baked frozen Pepperidge Farms Pastry Shells - it was the best!

Considering the price of crab meat, it's good to have a reasonable alternative for weeknight dinners. These are really quite good--somewhat reminiscent of the salmon croquettes lots of moms used to make. Serving the patties on baby greens lends a modern twist, as does the lemony mayonnaise sauce. (The mayonnaise is fine as is, but can easily be tweaked to suit your mood by adding more lemon or a touch of garlic.) Paired with a loaf of crusty artisan bread and a dry white, you've got yourself a rather memorable dinner. Dessert is optional, of course, but you really can't miss with good-quality store-bought brownies.
