This vegetarian entrĂŠe goes together in a flash. It is also healthy, economical, attractive, and bursting with flavor--a dish I am certain to make again. (I'm also thinking this pesto would go beautifully with grilled lamb.) If you've just returned from the farmers' market, serve a salad of vine-ripened tomatoes and cucumbers on the side, along with a loaf of good, crusty bread. For dessert, keep it simple with store-bought biscotti and orange sherbet.
