The title says it all: this colorful, Italian-esque entrée is loaded with delicious ingredients. It also comes together in less than 30 minutes, which makes it suitable for a weeknight dinner. I served it over couscous, with green beans on the side. For dessert, a scoop of vanilla frozen yogurt drizzled with amaretto, and store-bought amaretti cookies. One tip: It will be easier to cut pockets in the raw chicken if you start with plump, thick chicken breasts...and a very sharp knife, of course.
