This has been such a crazy week, I only cooked twice this week which is virtually unheard of for me. One night after an especially grueling day I needed something quick that wouldn't take a huge amount of thought so I decided to turn to the reigning queen of 30 minute meals and this dish fit the bill. It was indeed fast and received an overwhelming endorsement by the family. A couple things to note: I used plan water instead of store bought stock, I used Turkey Keilbasa instead of pork or beef, and I added a can of diced tomatoes for an extra depth of flavor. This meal is also super budget-friendly.
