Heidi's Yummy Enchiladas

Here’s a quick and easy meal – chicken enchiladas – that can be adapted to your taste and style. Choose from cheddar, pepper jack, or Monterey jack cheese and then spice it up with Sting ‘N’ Linger Chile Verde. Or if you prefer, tone it down with the more tamed Black Bean Salsa. To round off the meal add rice and a side of refried beans Heidi's Yummy Enchiladas Boil chicken until done. Drain water and cut up chicken into small pieces. Place chicken in a large mixing bowl. Dice up green onion into small pieces and place in bowl with the chicken. Thin ¾ cup of cream cheese with 1/8 cup of milk and place in mixing bowl. Stir until chicken, onions, and cream cheese are evenly mixed. Place desired amount of mixture on tortilla and drizzle with salsa, top with sprinkle of cheese. Roll-up tortilla and place in 8x11 baking pan. Repeat with other 6 tortillas Top tortillas with more cheese and salsa. Bake a few minutes at 350 degrees until cheese is melted.
