Okay, I'll admit I was sucked in by the recipe's name, but this is definitely worth trying. There are some nights when an easy one-course meal is all I can handle, and this Chinese-style fajita is just the ticket. The cook's time in the kitchen is minimal--especially when you use the store-bought shredded cabbage and roasted chicken suggested in the recipe. Once cooked, dinner becomes interactive, with each diner encouraged to "roll their own." (If you own a tortilla warmer that you can place on the table, definitely use it here.) Those who normally rush through dinner will be forced to slow their pace and enjoy some relaxed conversation...perhaps enhanced with a glass or two of Tsing Tao beer. While grocery shopping, you may also want to pick up some green tea ice cream and fortune cookies for the dessert lovers at your table.

Golden Fish Sticks Print E-mail

My two year old like most kids loves fish sticks, but I can't stand those frozen ones so I set out to make her homemade fish sticks.  I've made this recipe twice for her and both times they were a huge hit.  I tried switching things up a bit by using panko bread crumbs once instead of the cornflakes and they were just as tasty, the leftovers make great fish tacos too!

Creamy Lemon Tart Print E-mail

I prefer a cool creamy fruit tart over a hunk of chocolate cake any day and this recipe produces one of the most flavorful tarts you will ever have.  It's quick and fairly easy to prepare, but to make preparation even easier you can use a store bought pie crust instead of making your own. For better flavor, use Meyer Lemons instead of regular ones when they are in season.  This is one that even the kids will like.

Focaccia with Olives and Rosemary Print E-mail

I don't bake, although one of my new year's goals is to bake more and I certainly don't make bread.  But even this flour challenged girl was able to pull off a little focaccia.  Focaccia like its cousin pizza dough can be topped with a million different things from Broccoli to Sun Dried Tomatoes.  This is a great flavor combination and makes quite the impression when you serve it for guests.  The recipe calls for Kalamata olives but I've been known to use good ole spanish olives in the jar or canned black olives and it is still delicious.

Healthful Rating: Olives are high in monounsaturated fats which are thought to be heart healthy. Especially healthy when pared with the suggested bean soup.
