When time is short and you still want to have a healthful meal this is it! Truthfully, I had my doubts about how this would taste due to the simplicity of the recipe. To my delight, it was delicious. Great complexity of flavor and the halibut and veggies were cooked to perfection. Boiled new potatoes would be a great addition and the cilantro sauce would compliment them nicely. Since all is cooked on one baking sheet, clean up was a snap. A tasty meal with little effort and even less clean up.
