We tried this at Pizza Antica recently. That evening the salad was offered with pancetta & gorgonzola. It was terrific. I utilized the recipe listed on Project Foodie with the following changes: 1) replaced bacon with 4 slices of pancetta, lightly fried, cut into small pieces 2) I omitted thyme (since I didn't have any fresh thyme & didn't want to go out. :) 3) I added 1/4 c gorgonzola cheese to the pan at the very end, tossed salad & served it. Everyone enjoyed it so much that we made it again two nights later. I suggest doing all the prep work early in the day so that \"making the salad\" later is simply an assembly process which takes very little time.
