Over the winter I picked up a bag of barley, I was either looking for an alternative to couscous and rice or maybe I was planning on making soup with it. Unfortunately it never made it out of the pantry until now. This recipe is light and the combination of parsley and walnuts complemented each other surprisingly well. I've been seeing quite a few interesting recipes lately containing tofu and I decided that maybe it was time to start incorporating it into my family's diet a bit. I first made this salad for myself to take to work and I was pleasantly surprised at how filling and tasty it was. It kept me so full that I even passed on my standard afternoon snack. I decided to give it a try for dinner, my husband enjoyed it minus the tofu dressing. Maybe next time I'll try using silken tofu and blend the dressing together, that'll get him. This salad was quite refreshing perfect for a lite dinner.
