Potato Kugel

(Arthur Schwartz’s Jewish Home Cooking by Arthur Schwartz, 2008)

This low-fat recipe does best with russet potatoes, which are dry and produce a lighter, fluffier kugel.

Kugel is generally a very egg rich dish but I double checked the book for you and it is indeed 12 eggs. In fact, in the book Arthur Schwartz says with respect to getting a "high and light kugel" that "what may seem like an inordinate number of eggs is the secret"...
