This dish is always a hit! I’ve served it for weeknight meals, dinner with friends and more elegant dinner parties because it is really easy to prepare and tastes great. Use the best quality Feta cheese you can find for optimal flavor. You don’t have to buy foil cooking bags to make this. Simply use a sheet of aluminum foil that is long enough to cover twice the length of your baking sheet. Assemble the items and fold the aluminum foil to seal and make your own backing bag. For a formal meal transfer the complete dish to an elegant bowl and sprinkle with fresh thinly sliced basil. Serve with crunchy bread and you’re all set.

I always find myself going back to these tasty quesadillas. They are simple to make, taste great and incorporate shrimp giving me some of my weekly ‘fish’ allotment. I cut the shrimp into tiny bit sized pieces so the quesadillas are easier to eat. The recipe uses mozzarella but Monterey Jack or other cheeses works here depending on what you have on hand. I top these with salsa – homemade whenever I have time and fresh tomatoes.

We made this recently and it was great! It's a really simple recipe, but the sauce with the ginger and sweet orange juice plus honey make it a wonderful dish. We made it as is, but next time we might add some baby corn and/or water chestnuts to give it a more chinese feel.
