Who doesn't love cheesecake and these mini cheesecakes were just so fun and easy to make, a great way to impress even your most sophisticated friends. I substituted goat cheese for the fromage blanc and I mixed the toppings up a bit, some had strawberry preserves, some had raspberry, and a few had yummy blackcurrant. These will definitely be a staple in my house.
