This is a hearty chili and a great way to "sneak" more veggies into your diet. Adding beans increases the fiber and protein content.

I never buy Brisket because it's known as being a fairly tough cut of meat, and I'm not always up for making a dish that requires hours of time, especially with two young children at home. But my family loves chili so I had to give this recipe a try. It was absolutely delicious and quite a step up from my normal quick turkey chili. I used a can of chipotle peppers in Adobo sauce diluted with a cup of water instead of the dried ancho chiles. I also used sweet potato/yams instead of butternut squash and threw in a can of black beans (I know not all chili requires beans but I couldn't resist). Try it, you won't be disappointed.
