Oh so good and easy! I must confess, I used canned corn and the result was wonderful.
Make a bit of the dressing on the side from EVOO, lime juice, S&P and then toss it over some lettuce/bag salad. Add a serving of the bean/corn mix. Serve with hot rice and some bread or tortillas. Dinner! Vegetarian, high in protein and complex carbohydrate. Healthful, delicous. Oh yeah!
