 Nothing starts a weekend better than hot off the griddle pancakes. But not all pancakes are the same and many are plain old boring. Today’s recipe from Churchill House in Brandon, Vermont is far from ordinary. This recipe for cottage cheese pancakes has been a specialty of Churchill House for more than 40 years. It has been featured by Yankee and Gourmet magazines and was recently published in Tracy Madeiros's new cookbook, Dishing Up Vermont. And you can’t get much more local than this - every ingredient in this recipe is produced in Vermont. Not sure about the cottage cheese? All I can say is give it a try and see for yourself how moist and delicious it makes the pancakes.
Churchill House Pancakes- 4 large free-range eggs
- 1/2 cup King Arthur all-purpose flour
- 4 tablespoons unsalted butter
- 1 cup small curd cottage cheese
Melt butter in microwave-safe mixing bowl. Stir in cottage cheese. Add
eggs one at a time and combine thoroughly. Add flour until blended.
Drop about 2 tablespoons at a time on greased 350F griddle. Cook first
side until bubbles break on top; turn. Pancakes will be light golden
brown, crisp on outsides and creamy on insides. Serve with warm Vermont
maple syrup.
