This satisfying dish is bursting with flavor, color and zest. Best of all it is open to lots of different substitutions. You may use chicken breasts in place of the thighs, but reduce their cooking time to 3 to 4 minutes. If you do not have a red bell pepper on hand any color will work beautifully. If you do not own a wok a deep sided skillet will do just fine.

While fresh corn is still available try using it in these zesty corn muffins. Although, these have a little too much Jalapeno for my wimpy self I simply use less Jalapeno and they are yummy. Or if you want to make them more kid friendly add cooked crumbled bacon in place of the jalapenos - my kids love them!

Do not forget the bread because you will need it to get the very last bite of this taste sensation. A crisp green salad with cooling citrus vinaigrette rounds out a flavor packed meal.
This recipe is so good that although it says it serves 8, if you work at it 2 people can put a really big dent in it! Trust me on this!
