Plum Almond Tartlets

I love combining nut crusts with fruit filling- this recipe is one step better.  When making this recipe don't toss out the juices from the plums. The juices are yummy and can be used in marinades, vinaigrettes, or reduced and poured over ice cream or pound cake-you can even use them on pancakes the next morning. I haven't tried it yet, but I would also like to try this recipe with nectarines… Yum!

Chicken and Cashew Stir-Fry

This satisfying dish is bursting with flavor, color and zest.  Best of all it is open to lots of different substitutions.  You may use chicken breasts in place of the thighs, but reduce their cooking time to 3 to 4 minutes.  If you do not have a red bell pepper on hand any color will work beautifully. If you do not own a wok a deep sided skillet will do just fine.

While doing the prep work combine the broth, soy sauce, cornstarch, and sugar in a small container with a lid.  When you are ready for the mixture, just shake to combine and add it to the pan.

Couscous makes a great side (much faster cooking time than rice) and fresh sliced tomatoes drizzled with balsamic vinegar and sprinkled with some additional chopped scallions, leftover from the recipe, round out a satisfying meal.

Fresh Corn Muffins

While fresh corn is still available try using it in these zesty corn muffins.  Although, these have a little too much Jalapeno for my wimpy self I simply use less Jalapeno and they are yummy.  Or if you want to make them more kid friendly add cooked crumbled bacon in place of the jalapenos - my kids love them!

Spicy Stewed Sausages with Three Peppers

Wow!  A wonderful take on the classic Italian sausage and peppers.  This recipe adds a bit more heat and additional vegetables to up the flavor.  Do not forget the bread because you will need it to get the very last bite of this taste sensation.  A crisp green salad with cooling citrus vinaigrette rounds out a flavor packed meal.

This recipe is so good that although it says it serves 8, if you work at it 2 people can put a really big dent in it!  Trust me on this!

Be sure to remember to use latex or rubber gloves while working with the serrano and habanero chiles and to keep your hands away from your eyes.  If you do not own a cast iron skillet, buy one.  It will be worth it if all you ever cook in it is this recipe.
