Fresh Corn Muffins Print E-mail

While fresh corn is still available try using it in these zesty corn muffins.  Although, these have a little too much Jalapeno for my wimpy self I simply use less Jalapeno and they are yummy.  Or if you want to make them more kid friendly add cooked crumbled bacon in place of the jalapenos - my kids love them!

Spicy Stewed Sausages with Three Peppers Print E-mail

Wow!  A wonderful take on the classic Italian sausage and peppers.  This recipe adds a bit more heat and additional vegetables to up the flavor.  Do not forget the bread because you will need it to get the very last bite of this taste sensation.  A crisp green salad with cooling citrus vinaigrette rounds out a flavor packed meal.

This recipe is so good that although it says it serves 8, if you work at it 2 people can put a really big dent in it!  Trust me on this!

Be sure to remember to use latex or rubber gloves while working with the serrano and habanero chiles and to keep your hands away from your eyes.  If you do not own a cast iron skillet, buy one.  It will be worth it if all you ever cook in it is this recipe.

Baked Figs and Nectarines over Ice Cream Print E-mail

I love figs and I love nectarines - this recipe is a match made in heaven.  The recipe uses low fat ice cream.  I indulge and serve it with fresh whipped cream or really rich French vanilla Ice Cream. I have also served this with homemade Peach Ice Cream…which is unbelievably good here!

Flat Zucchini Omelet Print E-mail

This recipe is far more interesting than its name. Although some may consider it breakfast, I think it makes a perfectly respectable lunch or dinner when paired with a salad of mixed baby lettuces, crusty artisan bread, and a glass (or two) of wine. The recipe uses fresh marjoram which is one of the overlooked heroes of the herb garden...think of it as oregano without the attitude. Since it is suggested the omelet rest 20-30 minutes before serving, it's also easy enough to make multiple servings when there are others to feed.  When dessert is on the agenda, try a perfectly ripe nectarine or a couple of store-bought amaretti cookies.
