This simple dish is really yummy.  Although it's great as is, I really love it when served with freshly made Chinese style plum sauce (or apricot sauce). An added bonus is that this dish is very lovely looking on the plate. Be careful to not have the heat too high when you are cooking the chicken though, or your sesame seeds will burn before the chicken is cooked through.

Thai Summer Bean Stew with Chicken Print E-mail

Before you head off to the farmers' market Saturday morning, take some chicken cutlets (or chicken tenders) out of the freezer, and feel secure that you're well on your way to making a fabulous meal. If you cook Southeast Asian dishes even occasionally, you probably already have the coconut milk, fish sauce, Thai green curry sauce, and jasmine rice in your pantry; just about everything else can be purchased fresh at the market. Where I live, we certainly don't get fava beans in August-but the recipe gives enough ingredient options to make this super supper your own creation. And since this stew goes together so easily, you may just want to make a fresh plum tart for dessert.

I recently had a grilled steak salad at a restaurant and was reminded how yummy they are. I made this recipe a long time ago and really liked it. If you're in the mood for a great grilled steak salad give this recipe a try.  For a fun variation, try adding ricotta salata in place of the parmesan cheese.

Chicken, Rice, And Mango In Lettuce Wraps Print E-mail

Savory, crunchy, fragrant, and refreshing-with all these things going for it, you really should give this easy summer entree a try. Lettuce leaves stand in for tortillas, which should please the dieters at your table; and the fact that the guests assemble their own wraps makes this recipe easy on the cook. The filling is served at room temperature, which encourages leisurely dining; and since each wrap contains chicken, rice, veggies, and fruit, you can afford to spend a little more time (and calories) on dessert. I served each guest a scoop of vanilla frozen yogurt sandwiched between 2 homemade chocolate chip cookies laced with pecans and coconut...yum. (Wrap each ice cream sandwich individually in plastic wrap, and they can be kept frozen for at least 1 week.)
