Granny Smith Apple and Brown Butter Custard Tart

This elegant, show-stopping dessert has a lot going for it. First of all, it's nothing like those slimy apple pies with cardboard crust and too much cinnamon; this is a sleek tart of caramelized apples suspended in custard. It also has a super-simple (and buttery-good) press-in crust, which should appeal to those who hate to roll out pastry. Made in a 10 1/2- or 11-inch tart pan with a removable bottom, it's the perfect size for holiday entertaining--at home, or to bring to a potluck. The only problem is that your friends may not believe you didn't buy it from an upscale bakery.

Corn Fritters with Salsa

ImageI love finger food and especially anything fried.  These corn fritters are a cinch to make, great for a crowd, light, crispy, and just plain good.  Terrific with Salsa but also good with something more cool and creamy, like a great southwestern style ranch dip.

Chicken Apple Bacon Burgers

I am always in search of a good burger and this one was a real winner.  The recipe was quick, easy and the end result beyond flavorful.  Perfect for a weeknight meal or for casual outdoor entertaining.  A couple of things to note, I usually use store bought ground chicken instead of processing my own chicken breasts. If you don't have sage a little poultry seasoning will work too. Last, but certainly not least, I always top the burger with few pieces of good sharp cheddar cheese along with the apples.  It takes the flavor to a whole new level.

Kale and Chickpea Soup

Healthy, homemade soup in 45 minutes? You'd better believe it! This makes a cozy dinner for a cold winter night--and also smells warm and inviting while simmering on the stove. The only other thing you'll need to round out the meal is a good, crusty loaf of bread...and a glass or two of wine, of course! The small amount of spicy sausage pulls all the flavors together, but vegetarians should not be deterred--it would still be delicious without it. This yummy soup has inspired me to explore even more uses for kale.
