Baked Yams with Cinnamon-Chili Butter

Yams and Sweet Potatoes are one of those perfect foods loaded with beta carotene, lots of vitamins and super rich in complex carbs as well.  I found myself with a few extras shortly after Thanksgiving and decided to so something really simple and a little more healthful than my sweet potato casserole with all the marshmallows.  This recipe was just the thing and sweet, spicy contrast of the cinnamon chili butter gave them just the kick I was looking for.

Anchovy Stuffed Mushrooms

I love finger foods - appeitzers, tapas, anything in pint size portions.  My mom always puts me in charge of making the appetizers for our big Christmas dinner and I've been looking for a new twist on your standard stuffed mushrooms.  The saltiness of the anchovies really compliment the mushrooms well here, even if you're not an anchovy fan you still have to give these a try.  I used Baby portabellas instead of standard button mushrooms and panko bread crumbs instead of regular.  This is easy to make and super delicious!

Herbed Creme Fraiche Dip with Crudites

Let's face it: everyone loves to dip. This is a refreshingly light appetizer for any party or potluck, and a delicious alternative to a green salad for home dinners. Creme fraiche is a little thicker than sour cream, giving this a drip-free dipping consistency; and the fresh herbs deliver flavor reminiscent of the summer garden. I'm not sure about cooking asparagus for 5 minutes--their spears must have been much thicker than the ones I used. But I'm all for dipping radishes, as I consider them a very under-utilized veggie. Farmers' markets generally carry the best selection of mild, tender "designer" radishes, usually a far departure from the coarse, peppery ones found at most supermarkets.

Staying true to my word about not overdoing it before the Holidays I've been keeping the meals at home super simple.  It really is fun re-visiting some of the old favorites.  My husband is a big sandwich guy and this one is a favorite.  Crispy chicken breasts (use Panko bread crumbs for an extra crispy crust), a simple tomato sauce and lots of fresh mozzarella cheese.  Only use the freshest Italian rolls with these.
