My mom always puts me in charge of making the appetizers for our big Christmas dinner and I've been looking for a new twist on your standard stuffed mushrooms. The saltiness of the anchovies really compliment the mushrooms well here, even if you're not an anchovy fan you still have to give these a try. I used Baby portabellas instead of standard button mushrooms and panko bread crumbs instead of regular. This is easy to make and super delicious!

Creme fraiche is a little thicker than sour cream, giving this a drip-free dipping consistency; and the fresh herbs deliver flavor reminiscent of the summer garden. I'm not sure about cooking asparagus for 5 minutes--their spears must have been much thicker than the ones I used. But I'm all for dipping radishes, as I consider them a very under-utilized veggie. Farmers' markets generally carry the best selection of mild, tender "designer" radishes, usually a far departure from the coarse, peppery ones found at most supermarkets.

My husband is a big sandwich guy and this one is a favorite. Crispy chicken breasts (use Panko bread crumbs for an extra crispy crust), a simple tomato sauce and lots of fresh mozzarella cheese. Only use the freshest Italian rolls with these.
