Corn and Potato Chowder

The weather has gotten very cold of late and that always puts me in the mood for a steaming pot of soup.  I was craving a bit of clam chowder but didn't have any clams on hand so I opted for one of my other favorites - corn and potato.  Super easy to make and super flavorful, the perfect way to end a cold winter day.

Although a good source of fiber, this soup is high in fat and sodium. Save it for a special occasion.

Sole with Tarragon-Butter Sauce

Sole is such a delicate fish--and a favorite of just about everyone--I always wonder why I don't think to cook it more often. It's also one of the most elegant quick meals you can make. This herb-scented version is a good basic recipe to keep on hand. One thing, however: I love garlic, but I think it's really overdone here, especially considering sole's mild flavor. I say cut the garlic down to one clove, or omit it altogether. It will still have plenty of flavor, and taste wonderful with a crisp white wine and a loaf of crusty artisan bread.

A little high in saturated fat. Could cut saturated fat a little by using half olive oil and half butter.

Mozzarella, Ham, & Basil Panini

Ever just crave a grilled cheese sandwich but perhaps something with a more sophisticated twist?  I love paninis or fancy grilled cheese as my husband calls them and this combo is one of my favorites.  If you don't have Basil, Arugula is a great substitute and if you have some leftover spiral ham it works so much better than the deli ham.  So good even the two year old ate it!

Hoppin John

My grandmother is from the deep south and one of the great culinary traditions that she brought with her up North is that of "Hoppin John".  It's said that if you eat Black eyed peas on New Years Day you are guaranteed health and prosperity in the New Year.  Her recipe is a closely guarded secret and I have yet to find one that comes close until now.  Great on New Years Day or any day.

Many bean/pea dishes are flavored with pork. A little high in fat, but beans/peas are loaded with nutrients and fiber.
