Paula Lambert is the owner of the Mozzarella Company, which produces and sells handcrafted cheeses throughout the United States. Lambert was the President of the International Association of Culinary Professionals for 2000. She lives in Dallas with her husband, Jim, who loves cheese almost as much as she does.  Her cookbooks include Cheese, Glorious Cheese and The Cheese Lover's Cookbook and Guide.
