 While we often think of baking, grilling and sautéing fish, we can do much more with it. One example is smoking. Smoking is an excellent way to preserve fish, which is dried as it smokes over a smoldering fire. The wood used in the smoking process adds flavor and color that can greatly influence the final result. Another part of smoking is the brining (salting) process which helps to preserve the fish. Smoked fish delicacies are enjoyed all over the world. Smoked salmon, prepared almost exclusively from king salmon, are found extensively in Germany, England, and Scandinavia (particularly in Norway). The largest market, however, is in urban areas of the eastern U.S., especially in large Jewish centers, where smoked salmon ("lox") are part of the daily diet.
