I love cooking but sometimes I just don't have time. I have a couple of quick meals but I'm getting tired of them! What kinds of things do you make for a quick meal?

Pizza! It's a great quick meal. I use pre-make pizza crusts. If I have fresh tomatoes then I dice some up and use them otherwise some sauce from a jar. Any cheese on had works but usually I'll use mozzarella with a bit of another cheese to jazz things up. Sautee some veggies, toss in the oven for 10 minutes and you're set. It doesn't really require planning, is pretty quick and always tastes great.... Added bonus is that with some fresh fruit for dessert it lasts us two nights.

My new favorite quick meal is a quesadilla made with leftover chicken or beef. I saute sliced onions and green peppers with a bit of oil, salt, and cumin, mix in the chicken, and then put all that between two corn tortillas (less fattening than the flour ones), add a bit of grated cheese, and brown on both sides. Served with salsa and sour cream, it's filling and festive to boot.
