ImageThis weekend I made holiday cookies.  I'd been trying to decide all week what to make and in the end decided on an old favorite - white mice.  Sadly, just getting into the holiday spirit and cookie baking mode was difficult this year.  When I was growing up in Buffalo, NY, December always seemed like a festive time that stood out from the rest of the year.  I really think the snow had a lot to do with this.  After a hot humid summer and chilly fall, the first snow always seemed like an exciting event - of course I didn't have to shovel the driveway!  Now living in California, December doesn't seem nearly as festive, which may be why I couldn't decide what cookies to bake.  

The white mice were a good choice, however, as they were fun and quick to make.  They really don't have much to them other than confectionary sugar, butter, flour, vanilla and walnuts.  Mixing them together is simple and rolling them into little balls a pretty quick process.  After they are done cooking, I particularly enjoyed rolling them in the confectionary sugar to coat them.  The sugar topping not only adds the necessary sweetness to what is otherwise a pretty plain cookie but it makes them into little white treasures.  The process definitely got me in a more festive mode and reminded me of the wonderful December mornings of my childhood when I would awake to find a nice fresh dusting of snow on the ground.

Perhaps next year I'll make a more elaborate set of holiday cookies to share with friends but this year my small little batch of delicate and delicious bit sized white mice are something I know Husband and I will really enjoy. And they helped bring on the holiday spirit!

Happy Holidays

 

White Mice

  • 1 cup butter, softened
  • ¾ cup confectionery sugar
  • 1 teaspoon vanilla
  • 2 cups flour
  • 1 cup finely chopped walnuts
  • Extra confectionary sugar

Heat oven to 300 degrees.

Cream butter and ¾ cup sugar, add vanilla.  Blend in flour with a spoon. Add nuts. Shape into ¾ inch balls, rolling in palm of hand. Place ½ inch apart on ungreased cookie sheet. Bake in 300 degree oven for 25 to 30 minutes or until cookies are a creamy color. Remove to rack until just warm; roll in a little confectionery sugar. Cool entirely and roll again in confectionery sugar.

Makes 3 ½ dozen.
